Simple Seasonal – Fall/Winter 2015



A great place to start, our Simply Seasonal menus are designed to cover all of the basic culinary skills and techniques. Recipes are great for quick weekday meals or combined to build a more elaborate dining experience. Each 3 course meal includes one starter, an entrée with two sides, and something sweet or savory to finish.

Fall/Winter Menus

 

Boil, Braise, and Poach

Cobb salad, romain lettuce, carrots, ham, boiled eggs, avocado, with smoked paprika vinaigrette

Braised chicken fricassee, onion, garlic, chicken, and cream

Potato Roesti, crisp fried potatoe cake

Maple glazed root vegetables, carrot, parsnip, rutabaga, celery seed and butter

Poached cinnamon apples, crispy puff tart and basil cream

 

Comfort and warmth

Mushroom soup, mushrooms, flour, chicken stock, thyme and cream

Pickled beets, small beets, coriander, mustard seed, bay, cider vinegar

Mashed sweet potatoes, bay leaves, ginger and nutmeg

Pot roast, cooked slow and tender, fresh spice, onions, garlic and red wine

Apple pie, no fail pie dough, cinnamon, apples, cheddar

 

Week day meals

Goat cheese croustade with honey and caraway

Carrot soup, onions, garlic, cumin, and red lentil

Ceaser salad, romaine lettuce, lemon, anchovies, shallot, parmesan, herbed croutons

Mac and 4 cheese gratin, pasta, 4 cheese cream sauce, parmesan, butter, breadcrumbs

Crepes and cream, fruit preserves, melted chocolate and Chantilly cream

 

Sunday Brunch

Cranberry scones, thickened vanilla cream, black currant preserves

Gravlax, salmon, sugar, salt and spices, chives cream cheese

Hash Browns, potatoes, sausage, onions, and garlic

Eggs benedict, poached eggs, English muffins, smoked ham and hollandaise sauce

Pain perdu, cinnamon, nutmeg French toast, maple syrup and butter

 

Pantry Raid

White bean soup, Onions, garlic, smoked pork, chicken stock, tomato, white beans and thyme

Tossed greens, Baby greens, cranberries, pecans, creamy herb vinaigrette

Ham and Cheese soufflé, eggs, milk, smoked ham, flour, herbs and swiss cheese

Quinoa pilaf, Walnuts, black currants, spinach, carrots, onions, garlic
